One of my associates at Harter House, Adele, told me about this recipe.
She said it is one of her favorites. And Super Easy.
Ingredients
Cake
1 box yellow cake mix4 eggs
1/2 cup vegetable oil
1 (8 ounce) can crushed pineapple with juice
Icing
1 (8 ounce) container whipped topping, thawed1 small box instant vanilla pudding
1 (8 ounce) can crushed pineapple with juice
Instructions
- Heat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
- Cake: In a large bowl, combine cake mix, eggs, oil and crushed pineapple with juice. Mix well.
- Pour into prepared baking pan, and bake for 25-30 minutes or until a wooden pick inserted in center of cakes comes out clean.
- Allow to cool completely on a wire rack.
- Icing: In a medium-size bowl, fold together whipped topping, vanilla pudding and 1 can crushed pineapple with the juice.
- Spread over the top of cooled cake.
- Store in the refrigerator.
